Carrot Cake / Cupcakes

Is there anyone who doesn't love carrot cake? (Haters don't speak) Perfectly moist, studded with crushed pineapple, instead of raisins and nuts, and frosted with pineapple-rum buttercream. The cake is further moistened with a drizzle of simple syrup made with pineapple juice, brown sugar and dark rum. The simple syrup is also added to the buttercream, instead of cream!
