Our tagliatelle and pappardelle dough contains not only whole egg, but a generous percentage of yolk for added color and flavor. Horse Shoe Ranch (Pottstown, PA), supplies us with delicious eggs from truly pastured hens. This particular flour is a blend of spring and winter wheat. Serve this with our ragu Bolognese, or simply butter and cheese. If your pocketbook allows, a gratuitous shaving of white or black truffle would put this over the top.
