The Aimsir Distilling Company

The Aimsir Distilling Company is a craft distillery, located in Portland. Aimsir opened it’s doors December of 2020 after 6 years of behind the scenes research & construction. Aimsir was born from the idea that exceptional spirits could bring people together for extraordinary moments. Our tasting room is welcoming to minors and adults, as Aimsir recognized a need for parents to be able to have a tasting and/or a cocktail or mocktail with their families. Unlike breweries or wineries, co-owner and co-founder, Christine Hopkins, recognized that craft distilleries were not inclusive to all ages, thus exclusive to parents who now had to choose between spending time with their children & having a spirit tasting.

Aimsir is best known for its Aitil House Gin, which has won the highest accolades for any Portland Distillery, from the longest running craft distillery trade show: Best in Category, Best in Class, & Double Gold, medals from ADI. Aimsir also specializes in Straight Bourbon Whiskey (wheated) and Cold Brew Bourbon.
