Dutchman’s Peak Aged Tomme

Our flagship cheese, Dutchman’s Peak is named after the snow capped mountain that provides our Summer water, and our magnificent view. The cows graze on the pastures and gaze upon Dutchman’s Peak. This tomme style cheese has an earthy aroma, firmer texture, and sharpe and buttery flavors, with a tangy finish of fresh pineapple. We age this cheese a minimum of seven months, and the older it gets, the more “cheese crystals” begin to form. These crunchy bites are an amino acid called Tyrosine and are a sign of quality protein within the cheese.
