Since he was diagnosed with type 1 diabetes at the age of 7, Brad’s doctors told him to simply eat what he wanted and cover it with insulin, ignoring the impact that food has on blood sugar control. After years of hospitalizations and unstable glucose levels, his wife was forced to call 9-1-1 when she woke up at night to find him unresponsive. This was the final straw for Brad; he completely changed his diet, discovering ferments in the process. After seeing the effects fermented foods had on his health, coupled with his years of kitchen experience, he felt compelled to share his passion with the world.
