Honey Mushroom

The honey mushroom, or "Pidpenky" as it is known by Ukrainians, is somewhat like a shiitake- though slightly more tender, and with more umami flavor. (Some even say a hint of honey, but they may just be recalling the name, given for its honey brown cap) Be sure to cook thoroughly and try a small amount for your first time. This mushroom causes digestive upset when raw, and some people are more sensative to it than other.
