Wild Oyster Mushrooms

This is the same mushroom you will see cultivated, but the wild varients tend to have a stronger anise scent, more complex flavor, and better texture. On the downside, they are a favorite target for insects. As always, we are careful when harvesting to take only quality mushrooms. Nevertheless, larva eggs are nearly invisable will hatch eventually after the mushroom is picked. Solution: keep them cold and use them sooner than later!
