The blue chanterelle is the rarest of the group, and always a thrill to find. Growing in a ruffley cluster of vase-like florettes, it really can be a masterpiece of a mushroom. The flavor is buttery, and its blue pigment will dye a sauce. It is also thought to have neurological benifits.
