Porcini

This beautiful nugget of a mushroom grows in the high mountains during summer months, and along the coast into the fall. Young specimen are best, with a more pronounced hazelnut flavor. They are a crowd favorite, but also greatly appreciated by insects. we inspect and slice the mushroom in half when necissary, to check for bugs. Still, some evade detection, so it is best to use them soon after purchasing.
