Ramps

This is ramson, or bear garlic, native to Europe and Asia. Fortunately for us, we have found a very rare patch in our local woods that was likely planted by European immigrants, decades ago. It is creamy and garlicky, with a tender texture like spinach. An absolutely gourmet addition to our Spring market spread. Of course each year we take care to harvest only what the patch can sustain.
