Fiddleheads (ostrich fern only)

Wild ostrich fern fiddleheads. A favorite springtime delicacy. Yes, though they are infamous in the maritimes, we have our own crop here in BC (if you know where to look.) Due to our highly varied terrain, we enjoy a nice long season by "chasing spring" from the coast, up into the interior mountains. Ostrich fern is considered the tastiest and safest species to consume, and is served in fine dining restaurants worldwide. It should always be cooked thoroughly.
