British Columbia is one of the best places on the planet for eating wild. During the right weather, mountain conifer forests are brimming with an incredible variety of bold, pristine mushrooms. There's the buttery fragrant chanterelle, the firm nutty porcini, the crisp lobster mushroom- reminiscent in both flavor and texture of its namesake. In the spring time, fresh green nettle sprouts, maple blossoms, fiddleheads, and wild asparagus usher in the growing season.
