BOMBAY BIRYANI MASALA

Fresh and aromatic spice mixed with choice of lamb, chicken, fish, or vegetables and layered with fragrant long grain Basmati rice.
The components are assembled in a pot, covered and secured with a lid to give "Dum" which translated to pressure which creates the steam trapped inside that cooks the meat (traditionally) to tender perfection.
Served with yogurt raita, the biryani is absolutely irresistible, fragrant and delicious.

Ingredients: Coriander seeds, cumin seeds, caraway, fennel seeds, green & black cardamom, cinnamon, star anise, cloves, black peppercorns, bay leaf, mace, nutmeg, turmeric, Kashmiri red chili powder, chili powder, dried plums with pits, dry mango powder.
