We are a build-your-own ice cream sandwich truck. We bake all of our cookies from our bakery here in Colorado Springs and use Blue Bell ice cream as well as ice cream from a local creamery in Monument for our vegan options. We always have gluten-free, dairy-free, soy, corn and nut-free and vegan options on our truck (cookies and ice cream) as well as our regular items. Would love to join you all!

I (Lori) opened Lori Lynn's Cookies and Cream after years of dreaming of having my own bakery. I owned and operated a cookie delivery business (True Mountain Bakery) from 2016-2019, which fueled my desire to share my cookies with my community. My grandpa always said I’d be selling my cookies someday. Welp, here we are!
My love for baking is only slightly overshadowed by my love for people. I have a passion to see our customers hanging out together, connecting with each other and getting to know each other better as they enjoy our from-scratch creations. Having an ice cream sandwich truck seemed like the next best step for my life. I’m thrilled to meet people from all over the world right from the window of our truck, Marta.
I love meeting new people. P.S. I graduated from Fort Lewis College in Durango, Colorado with a degree in Spanish - hablamos espanol!
