I am a 100% Hispanic woman locally owned small business just starting out at the Beaches of Jax. My name is Veronica Joy Didelot, I have been married for 18 years to my husband Michael & have a 16yr old son, Vinny & a 15yr old daughter, Mia, & 2 crazy little dogs Betty and Max. Five years ago, God laid a path we had no plan to walk and so with faith in the blessing of a new career for my husband, we transitioned our family 1200 miles away from all our family and friends in San Antonio, TX here to Jax.
From the minute we decided to move here, every door that needed to open has been opened, just by doing exactly what I never planned to do. Yes, you read that correctly (LOL). Prior to moving here, my plan was to use the curriculum I developed while earning my M.S.Ed in Curriculum, Instruction, and Assessment to open a school that was going to change the face of education. (I still plan to do that😍 ) And, Michael made all the sacrifices to support me in doing so, but, now it was Michael’s opportunity to grow his career, and that godsend afforded me the chance to be a stay home mom while my kids shifted between finishing elementary, starting middle school (and who planned for Covid MIND BLOWING), and now in to high school.
So how in the world did I end up being the Pico Princess??!!??!?!?? I DON’T KNOW HOW TO MAKE A LITTLE BIT OF PICO 😁 and Michael, loves my Pico, but there’s only so much Pico one can eat of THAT MUCH PICO before it goes bad sooooooo,, that it wouldn’t go to waste (ayyyyyy my mom’s voice😂 ) I started taking it to the pool and the gym and to the kids school's where I was volunteering …it’s easy to approach strangers when asking “hey y’all wanna try some Pico and chips?” - Right?? LOL
To my point...EVERYONE that ate it told me “you need to sell this.” I just laughed and thought they were crazy, I’m a teacher…I just love making Pico and feeding it to people, then one day, a friend forced $5 at me saying, “Veronica, I absolutely cannot take this from you every week for free…it was THEN, I thought, hey…maybe I can make money making Pico!!
So, being the researcher that I am, I made an appointment with the SBDC at UNF. I took my Pico and chips and was ready to go full force and start selling Pico…little did I know how much of an investment it would be to start a food processing business, that was in June of 2020 and then COVID hit full force. During that time, I focused on the #1 goal SBDC gave me, a recipe, my Pico needed to be consistent in heat…it took a YEAR, but I did it!! Now when anyone eats Pico De Joy it’ll be the same delicious flavorful experience.
Fast forward thru 2021 to Jan 2023, I got my FSMC, set up my LLC, turned 50, and wouldn’t shut up about how much I believed in my Pico...January 2022 the financial opportunity presented itself, and the door was opened and another paver laid in the path I needed to walk. So, we did it, we took the leap of faith again, I started slinging Pico on 03/12/23 and after only 3 Sundays at Atlantic Beach Farmer’s Market, Native Sun Jax found me and can’t keep Pico De Joy the shelves!!
It's time for all of Jax to know all that Tex-Jax Foods De Joy has to offer: I offer free samples of all my Vegan and Gluten free products: Pico De Joy, Pina De Joy, 🔥Pico De Joy, Pintos De Joy, and Guac De Joy. The Guac De Joy is made to order table side!!
