Bellicchi’s Classic Biscotti
Began as a Mission and Became a Business

Born of adversity, sustained through a love of baking and supported by Biscotti lovers, I founded Bellicchi’s Classic Biscotti.
I learned to bake Biscotti (in Italian, translates as twice cooked: “bi” = two and “cot” = cook) from my mother-in-law Bellicchi many years ago. My husband Eric helped me, turning the Biscotti on the second bake.
Sadly, Eric was diagnosed with early onset Alzheimer’s at 57. Even as his capabilities declined, he could still turn Biscotti. It was something we could continue to do together, and often baked more than we could eat.
After Eric died, I could simultaneously honor his memory and participate in baking – something I have always loved to do. You could say it was a leap of faith to start a business at 68, but isn’t that what faith is all about?
Hope & Main, kitchen incubator in Rhode Island, provided baking space, start-up support and unflagging encouragement to build my business.
Whole Foods was our first retail customer. We started in the bulk cookie bin, graduated through a number of stages and now proudly live in the cookie aisle in stores throughout New England.
Our signature differentiator is “The Crunch”. For each flavor I take one ingredient and push its smack to the max. Bellicchi’s Classic Biscotti are smaller in size than many other Biscotti, they are larger in flavor. So whether you eat one with breakfast, enjoy a couple with an afternoon coffee, or savor some with your favorite wine, with each bite, I guarantee you will experience a quick trip to Italy. At the outset supporting Alzheimer’s became our Social Mission, I donate monthly, support Alzheimer’s events, (I’m training to ride a metric century, 62 miles in June) and show up with biscotti to share.
