I have spent many years in the restaurant business, supervision, and management. After moving back to Florida, fairly recently, I went back to a regular old 8 to 5 job working for the great city of Jacksonville. Though it is a rewarding job, I miss the excitement and interaction that I have only found in the food industry. My wife and I choose our business, and the elements that make it a reality, to fulfill that excitement, not to mention earn a little extra cash and freedom. We love our products, we love each other, and want to share that passion of life with the many faces Florida has to offer. We figure there's no better way to get the diverse interaction than by servicing our customers at local events, markets, and festivals.
We roast raw almonds, cashews and pecans in a cinnamon glaze which have an amazing aroma. These are roasted on-site for on-goers to see. We also have a cotton candy machine up front so that the kids can see their tasty treat spun right before their eyes. If the event and circumstances permit, we keep boiled peanuts rolling in their pots. We tend to keep a regular salty style and spicy Cajun style for those not seeking to satisfy just a sweet tooth.
We are fully licensed, permitted, certified, and insured.
We have a blanket insurance policy through United States Liability Insurance Company which covers any and all "landlords" (any entity in which we rent space from). We are permitted through the Florida Department of Agriculture. This permit is also accepted in place of the Department of Business & Professional Regulation's temporary food service event license. This permitting process also included an inspection of our commercial kitchen (commissary), our equipment and processes for preparing our products. I have also completed the Food Safety Manager Certification as required by the State.
