We make beer, bread and pizza in Logan Square. We'd like to sell our toasts at the market. We make bread with organic grains from Lonesome Stone in Wisconsin, and use sourdough yeast to ferment the loaves. Our jams, jellies and other spreads originate locally as well, where possible. We would make jams from Mick Klug, Seedling and Smits fruit and herbs, as we already have strong relationships with both farms.

Jess hails from the Bay-area, where she baked pastries at Craftsman and Wolves and beautiful breads at The Mill. She's now the head baker at Bungalow by Middle Brow. She loves bread and pizza, and, since grains are the principle ingredient in both, pays very close attention to grains: from their farming and distribution to their packaging and final consumption.
