We are a humble, one-wahine, gluten-free bakery that sources local ingredients first. We also specialize in diabetic friendly, gluten-free treats -using more local veggies in our batters to lower carbs and increase nutrition. Our specialty breads and treats are always made using local eggs, local honey, and local fruits and veggies first. Our Haupia Poi cupcakes are a favorite! We malama aina and are committed to supporting local ag and giving back to our community. Ten percent of proceeds go to our newly birthed non-profit, This One Breath Foundation, that goes to support local caregivers of children with special needs.

I have a background in local agriculture and health. I was premed at UH Manoa in the early 2000's and also specialized in tropical ag and botany. However, my health took a turn for the worst during college. After discovering it was due to celiac disease, I was able to completely alter my diet to heal my gut. My kitchen was my laboratory. I broke down gluten as a protein and experimented with adding protein back into my batters in healthy, non-gluten, ways. I also add gas and lightness to my batters by incorporating carbonated water paired with a unique process of how I mix my ingredients. When my customers taste my treats they usually say, "Wow! I would have never known these are gluten-free!"
I am still growing my product lines. I have three boys, two with Cystic Fibrosis. (Half of CF patients become diabetic due to a complication of the disease.) Our oldest son is already exhibiting risk factors for diabetes. Due to the unique needs of our own ohana, I have come to develop more health conscious, gluten-free, and diabetic friendly treats. With every pop-up I do, I also offer at least one product that is dairy-free as well.
I am friends with KCC farm vendors, Thune and Moe Hongphao. I also use Wai Mele Honey from the Big Island (-we have a farmhouse in Waimea and Wai Mele is partially produced there.) We are very committed to growing our local ag industry and supporting local vendors first.
