We`re a Mobile Pizza Business. We specialize in Neopolitan style pizza using High Quality imported Italian flour, locally sourced Tomatoes for our sauce and locally sourced cheeses and ingredients for toppings. We make our own mozzarella in house so it is perfectly creamy and melted. We use a gas/wood burning pizza oven made by a local company (@Ilfornino.pizzaoven). We are based out of Valley Cottage NY but we travel across the tri-state area. We will be doing all sorts of markets, festivals and private events.

My name is Erick Carrasco. I am the Chef/Owner of Mostly Dough LLC. I was previously the Chef and creator of @norcinanewcity in new city ny. After creating the menu/kitchen and setting the standard for that restaurant I decided to go out on my own with a small mobile pizza business. I feel like this is the best way for me to perfect my pizza style. Previous to Norcina I was a chef at Eataly in the Flat Iron district in Manhattan and before that I was also a chef at Beauty and Essex in the lower east side of Manhattan.
