We are a farm-to-table catering business that operates a food truck and carryout restaurant. We would like to operate a rice ball stand at market where we sell fried rice balls with our housemade sauces and toppings.
My name is Meiko. I started my food business in 2013 operating a weekly pop-up called the Pink Flamingo. We source from Detroit and SE-Michigan-based farms to provide a rotating, seasonal menu.
One of our most-loved items from our food truck are our rice balls:
hand-formed "arancini" filled with caramelized onions, herbs and spices. We pair them with sauces we make: banana ketchup, honey mixed with fermented chiles, miso chipotle sauce and curry peanut sauce. Because they are such an easy hand-held item (and are vegan and gluten-free), I think they would be a great addition to a farmer's market!
