Chacon Creek Canning strives to support sustainable backyard growers and food security by canning and preserving locally sourced and foraged foods. Everything we create comes from the local Texas landscapes, or from local community gardens, trying to educate growers and decrease reliance on chain grocery stores. We are most known for our prickly pear jelly and “coyote compote”—locally foraged prickly pear and jalepeno!

During the week, I am an English professor who is fascinated by the story of landscape. This fascination is reflected in our packaging created out of upcycled book pages. Moving to Texas 3 years ago was a massive shift and I became fascinated by the vast richness of the land amid the harsh look of the mesquite scrubland where we are based. I started Chacon Creek about two years ago, when we sold out of our prickly pear jelly in a week. An avid volunteer in the local community garden, I have been working to expand the network and educate neighbors and friends about the benefit of locally grown food sources for our bodies and our world.
