A couple years ago, I got fungi on the brain and wanted to learn more about the world of mushroom farming. After doing some extensive research, I realized an internship at Mississippi Mushrooms in Minneapolis would be a great start in the right direction. During my internship there in the summer of 2018, I realized cultivating mass quantities of mushrooms proved to be tougher than I imagined. The experience was phenomenal and it set me on a path of finding ways to use mushrooms outside the norms of standard culinary practices.
