Lekker means "yummy" in Dutch. And that's exactly what we provide. A hot and yummy serving of ten mini-Dutch pancakes (poffertjes - pronounced POH-fur-chiss) with sweet and savory toppings. Whether you prefer the classic butter, lemon and powdered sugar, or the Northwest inspired combination of salmon, creme fraiche and greens - this treat is sure to delight.

I make poffertjes not just because they're yummy, but because they connect me to Holland. My family moved there when I was eight and every winter I would stand in front of the huge poffertjes griddles as cooks flipped each poffertje in miliseconds. They were almost just as much fun to watch being made as they were to eat.
Poffertjes were first created when wheat shortages during the French Revolution forced clergy to rethink communion wafers. Dutch abbeys used the more readily available white buckwheat flour to make these mini-pancakes for church service. Over time, poffertjes became a national favorite in and outside the church. Today, with wheat flour reincorporated, they're served as a street food at Christmas and New Year's celebrations.
Lekker's poffertjes are my interpretation of the Dutch classic. They're gluten-free because I was diagnosed with Celiac's disease at 19. American buckwheat flour makes them a gray that is reminiscent of the rainy skies of the Northwest. I use local ingredients as much as possible, but especially when it comes to berries and salmon - ingredients that should be treated with respect as part of a long, long history of food and indigenous people near the Salish Sea.
My desire is to pass along this yummy treat to people in my home. To share blended traditions and sweetness.
