About

Created by Chef Derrick Paez, and his wife Monika, 3x3 KITCHEN was formed
out of their passion for delicious, ethical, sustainably sourced “slow food”.
Quite literally the opposite of fast food, the slow food movement promotes
local farmers and businesses, places nutrition and quality over mass-production,
and allows the community to take part in a more sustainable food model.

With more than 20 years of experience as a chef sourcing ingredients from
local green markets, Chef Derrick Paez is thrilled to bring his own take on
slow food cuisine to the local community with hand-crafted GLUTEN-FREE fare
inspired by the best seasonal ingredients found at local farmer’s markets,
sustainably supporting Hudson Valley Farms.

Sustainability and wellness are two of the core values that inspire and drive
Head Chef DERRICK PAEZ in his mission to bring nutritious, wholesome, and
locally sourced cuisine to the Hudson Valley community.

As a class of 2002 Culinary Institute of America alumnus, Derrick trained
regularly in professional three-star kitchens and staged for acclaimed
chef Daniel Boulud. After graduation and for years to come Derrick worked with
some of the world's most renowned chefs and restaurants in New York.
Starting with TanDa by chef Stanley Wong on Park Avenue South, followed by
DB Bistro Moderne in New York, Spice Market by Jean-Georges Vongerichten
in the Meatpacking District, and last but not least with Restaurant Daniel.

Now Derrick brings his years of experience and expertise to his own mission,
3x3 KITCHEN. Family-friendly, gluten-free cuisine crafted with seasonal
locally-grown ingredients from Hudson Valley farmer’s markets.
It’s the perfect marriage of holistic nutrition and culinary expertise to craft delicious
homegrown cuisine. With a mission to inspire and inform the community about
the benefits of “slow food”, and a desire to support local farmers,
the 3x3 KITCHEN is the perfect fusion of purpose, wellness, and world-class fare.

We are married and have been working together for the first time on 3x3 Kitchen. It has been an interesting journey of discovery to listen & learn for us both. We bring out the best in each other and complement different aspects of running a 3x3 Kitchen business.

Derrick is a chef, but some call him a “gluten-free scientist” because Derrick ambitiously re-produces non-gluten classics in delicious gluten-free items. Our bread has an amazing crust, and airy center after generous proofing in a professional kitchen, and maintains both when frozen/defrosted.

Monika is a boot designer and her day job is overseeing the fashion collection for one of the biggest western boot companies in Texas, Old Gringo Inc. Her creative experience in line building and marketing comes very handy in the design/marketing aspects of running a business.

Both Monika & Derrick attend farmers on the weekends.
Over the past 18 months, we developed many friendships with fellow farmers/vendors but also bonded with our early adopters and followers.
