Sourdough Sweets & Savories LLC is committed to providing Hawai’i nutrient dense, preservative free sourdough products. Well recognized for our Loaded Loaves which showcase local ingredients, we also offer a variety of sourdough pastries. We value simple and local ingredients (made in Hawai’i and USA) with keeping sustainability and low environmental impact in mind. Here are three values of my company:
1. Keeping the dough simple. I take pride in using only three clean ingredients for the base of my dough: high-protein gluten flour grown in the USA, water, and a Hawaiian Alae‘a Salt blend. None of my products contain preservatives.
2. Keeping the ingredients local. Generally, I sell four different sourdough loaf variations at each market. I also allow people to preorder from my full menu which includes 10 total variations. Vamp Slayer, our most popular, features roasted garlic with fresh rosemary and thyme grown in Waialua. Princess Purple Potato includes steamed Okinawan sweet potato grown by Aloun Farms which is located on the West Side of O‘ahu. Using locally grown ingredients from farmers and other small businesses in Hawai‘i is of utmost importance to me. I will spend the extra amount to keep the profits local. If items cannot be found locally, then products grown in the USA will always trump foreign ingredients.
3. Keeping sustainability in mind. Sourdough is sustainable. Growing my own wild yeast, saving the discard to create my sweet treats and savory items, and using leftover loaves as breadcrumbs or croutons is a never-ending cycle. I take every measure to minimize waste. Our repurposed loaves and items made from sourdough discard are offered in glass jars at every market. We encourage our customers to “BYOJ” (Bring Your Own Jar) to exchange for one of our own. Our Jar Exchange program is yet another facet of our sustainability mission.
With these three values in mind, we provide our community with nutrient-dense products while collaborating with other local business owners who share the same values. When we keep our profits local, Hawai‘i can develop a more independent agriculture and food industry.
