Chicago Maple was started in 2018 by Chicagoland residents Jared Hunt (resident for 7 years), Scott Friske (10 years) and Derek Friske (3 years and also Scott's brother). Jared and Scott purchased a portion of Lindy Hunt's (Jared's father) Organic Maple Farm in Michigan (Mackinac Bluffs Maple Farms, Inc.) and being residents of the Chicagoland area, decided to develop a brand that ties their roots in Chicago with their Organic Maple Farm in Michigan. While Lindy runs the operations in Michigan, Scott, Jared and Derek are working to spread the word about Pure Maple products to area residents through partnerships with stores and restaurants as well as sponsoring pancake breakfast fundraisers to support local schools and community causes. We are passionate about our products and want to share our passion with the Greater Chicago area.
Use Only Organic Materials
At Mackinac Bluffs Maple Farms, we utilize vacuum pumps and tubing to draw sap from our 450 acres of tapped maple trees. Once the sap enters our sugar house, we use reverse osmosis to remove a portion of the water and further concentrate the sap. Once concentrated, we move the sap into our evaporator which draws the remaining portion of water off until our syrup reaches a density of approximately 68 brix - the standard density of Pure Maple Syrup. To make maple sugar and maple cream, we simply continue the process of removing water from the syrup until it becomes a cream consistency or entirely granulated sugar crystals.
All of our processes are inspected and approved by the Ohio Ecological Food and Farm Association (OEFFA). Both our Mackinac Bluffs Maple Farms and Chicago Maple brands are certified organic by OEFFA.
