Bandidas is a pop-up cafe located in Lakeland, Fl where connection is at the core of everything we do. Through the lens of food, we strive to create inclusive spaces where everyone is welcome. In our kitchen everything is made by hand in harmony with the seasons and the local bounty that Florida has to offer. We believe that the charming irregularities of a hand-shaped pastry make it more exciting to eat. We believe in knowing the names and faces of the people who make your food. In the Bandidas kitchen, less is more. Through the lens of simplicity, we hope to teach the community the power of a small-scale business.

Gabriella Vigoreaux and Giovanna Favilli are trained chefs and graduates from the International Culinary Center in NYC. Giovanna is a former NYC restaurant cook and baker. She also worked as a recipe developer in the Vice Media test kitchen. Gabriella is a food editor and has worked in test kitchens for Good Housekeeping and Bon Appetit magazine. She was also the Culinary Director and head baker for Smith Canteen, a neighborhood cafe in Brooklyn.
