In addition to frozen Mangalitsa pork cuts, we also carry a full line of Mangalitsa, Texas Made Salami such as Sopprassata and Nduja. We also carry several exquisite whole muscle salami like Coppacola and Guanciale.
Pastured Free Range Antibiotic And Hormone Free Non Gmo Cover Crops Low Till
All our animals live 100% outdoors, pastured raised and fed a ration developed by biologists and nutritionists. Our feed rations are always non corn, non soy, and non GMO. Aside from their daily rations our pigs feed on native and planted grasses when available. We use animal rotation to let lands and soils rejuvenate and rest to healthier soils. Co-Founder, Amber, is currently going through and extensive 2+ year program learning and putting to use best use practices to natural care for, and rejuviante soils. This includes no till practices and spraying soils/grounds with natural, on farm made compost teas to introduce new, thriving bacterias to aid in better crop yields and healthier livestock.
Jay and Amber DeSimone
We, Amber and Jay, originally purchased our Waxahachie property in Fall of 2019 with the intention of getting our boys out of the city. The timing was an absolute blessing with Covid rolling through the country starting early 2020. We purchased our first Mangalitsa pigs in Mid 2020 is hopes of creating a homestead environment for our family. As things quickly evolved, we realized we wanted to introduce this amazing animal to DFW. We didn't even know we were starting to create our story until we were months into it. As Covid evolved, our story continued to develop into a full on farm is over 50 pigs, 200 chickens, a dairy cow, ducks, geese, turkey, and finally our beautiful Peacock, Kevin. We started participating in Farmers Markets in the Spring of 2021. It's been an amazing time where we've met and have become friends with amazing people. Our story continues to evolve daily with some incredible on-farm events coming soon.
