For over 30 years , Jim has been syruping in the Lebanon area. Chuck joined Jim about 7 years ago and started retailing the remarkable syrup that they both now produce. They have 3000+ taps and from late January to early March wait for those "cold" nights and "warm " days so the sap flows up and down the sugar maple trees. This is when they collect the sap and start to "cook" it. It can take up to 9 hours to cook down 500 gallons of sap to make 10 gallons of syrup. Then in April Jim starts taking care of the bees he wintered and the process of honey collection can begin.
