About

My name is Auzerais, I am the Founder of Blondery, a limited-release cloud bakery that challenges what fine-dining should look like by creating delicious blondies and other gourmet treats that are shipped directly to the consumer!

I’ve held positions at some of the country’s top bakeries and restaurants. I was a pastry chef at Bouchon Bakery, I’ve staged at French Laundry, Per Se, and Daniel. I did an internship at Alain Ducasse’s pastry school in France.

Like most pastry enthusiasts, I started baking when I was 8 years old and let’s just say, it was not giving future gourmet pastry chef. I sucked. I knew that I sucked because I come from a family of restaurant operators who would not hesitate to let me know that what I had prepared was not up to the family standard. So, I refined my blondie recipe for 10 years. It started as a flavor memory from my days growing up in church. One Sunday, a deaconess brought homemade pecan praline candies and I was blown away by the packaging and the care that seemingly went into such a simple, maybe overlooked treat.

So I went to Johnson And Wales University to hone my skills, graduated Magne Cum Laude and worked in the fine dining industry for some time. After working in the industry for a decade, I was frustrated by the lack of representation and the inability to create freely.

I quit the industry entirely for a life as a lifestyle manager but the blondies were something I would still make during the holidays and ship them back home. Eventually, I opened a website just for family and friends but they told everyone how good my blondies were and I sold over 500 orders.
