La Jacka Mobile

La Jacka started as a pop up vendor of only jackfruit, back in 2013. The business idea was not clear yet, the family started testing the market by selling the jackfruit by the whole, making cups of jackfruit and jackfruit juice for farmers markets throughout the valley. La Jacka didn't start selling vegan food until 2015, when Miriam acquired her first food truck. ⁠

She had planned to only sale a few jackfruit products out the truck but she knew jackfruit could offer more than just a few products. Miriam started selling food of both kinds, meat and jackfruit out of the truck, she would give away her jackfruit tacos most of the time because people coming to the truck weren't ready for jackfruit vegan tacos, then. How things have changed!⁠

Miriam created her jackfruit pastor & jackfruit chile verde in 2015. People began to show interest in the vegan options La Jacka offered. By 2018-2020, they were expanding their menu which now offers 20 all vegan Mexican dishes made with just jackfruit.⁠
