About

I'm Chris Warden, and Tugboat Bread is a sourdough micro-bakery that I operate out of my home in St. Johns under the Oregon cottage food law. I started Tugboat in July 2018, and since then I have baked well hydrated, naturally leavened hearth loaves every Thursday for customers all across Portland. With almost a decade of bread-baking experience and a background in professional bakeries, I bring a rigorous attention to detail and appreciation of craft to my work that distinguishes Tugboat from Portland's other small-scale bakeries. I also have a Rofco B40 bread oven that allows me to bake professional quality loaves at a higher volume than a typical home oven. At Tugboat, I don't use any white flour or commercially processed ingredients, mixing my loaves exclusively with organic, stoneground flour and grains from Oregon mills and farms. With each loaf I hope to change the way people think about bread, supplanting the store-bought white bread we all know with a delicious, hearty loaf that stays moist for a week and supports the health of our bodies and the health of the local farm economy.

Production Practices

Use Only Organic Materials

I use exclusively organic flours and grains from Oregon farms and mills such as Camas Country Mill and Ayers Creek Farm.

I moved to Portland in 2012 to attend Reed College, where I studied Anthropology and baked lots of bread in cast-iron pans. After graduating, I spent a year baking at Philippe's Bread in Portland before moving to Los Angeles to bake at Bub and Grandma's, a nationally recognized sourdough bakery. In late 2017 I returned to Portland because I missed the weather, local food scene and amazing farm produce. In 2018 I began working at Lovely's Fifty-Fifty (which only made me love Oregon's farmers even more) and started Tugboat Bread.
