The Muffin Van

Once upon a time there were two people (Marcus and Theresa Delphonse) who met and found out they had a lot in common - mainly a love of food, music, dancing and all of the different cultures of the world. They danced and dined and then opened a restaurant together, got married, became parents, moved to Florida, got a cancer diagnosis, put plans off to the side to support their family and each other, survived cancer, but had to work separately in order to get back on track.

So… Marcus worked as a personal chef and Theresa taught middle and high school French. Fast forward to the pandemic. Life was changing for all of us. It was important to find ways to keep occupied while staying at home. Marcus and Theresa had more time to go back to working together in the kitchen. They enjoyed the time together and began to plan a way to focus their life around baking.. At the end of the 20-21 school year, Theresa retired and spent the summer working with Marcus to develop a line of muffins and scones, with a goal to deliver them to the masses, much like the ice cream truck brings joy to the neighborhood. Thus, the name.

We thought that the van would come pretty quickly, but life is a journey, and it sometimes takes you places that you did not plan on. The Muffin Van currently supplies muffins, scones and quiche to a few coffee shops in western Pinellas. We are now venturing out to the retail market, hoping to share our delights with the world. It’s always nice to see the smile on someone’s face or hear the “mmmm, that’s really good” directly from the consumer. Once we have built our outdoor market and online clientele, we hope to be able to get that van. Really looking forward to driving into the neighborhood with our goodies to sell - you’ll know when we’re near. Yep, you guessed it, when you hear that annoying, repetitious instrumental refrain “Do you know the Muffin Man?” looping endlessly, coming closer to your block.

So, try our stuff! Not your ordinary muffins. Oh, and another thing…

After a summer of testing muffins, besides adding a few pounds to “2020 20,” Theresa also developed a gluten sensitivity. We now make some of the most amazingly wonderful gluten-free products that you’ve ever had!!
