Underground Meats

Business History: Underground Meats consists of a small group of whole-animal butchers and charcuterie makers who work with heritage breed hogs and goats that are supplied by small, independent local farms. We produce small batch, hand-tied salami, smoked and cured meats as well as whole-muscle salumi. We are located in Madison, WI and are a component of the Underground Food Collective which also includes the restaurant Forequarter, Underground Butcher and Underground Catering. Every aspect of our production is done by our team of eight people: butchery, production, post-production and quality control, packaging, sales and shipping.
