About

We are a local mushroom and microgreen farm! We've been in operation since 2017 and are currently supplying 40 restaurants in CO Springs with fresh produce weekly, along with grocery stores and individuals/families. We recently expanded our farm, adding freshly grown Cordyceps to our roster of 10 gourmet mushrooms varieties and 15 microgreen types. These extremely potent medicinal mushrooms have been a huge hit with the people who have gotten to try them (myself included), and I am very excited to bring them to the general public!

We are in the midst of acquiring our organic certification, which we will have within 2 months, along with being certified to accept SNAP/EBT. We currently have the best prices around, and am told our quality is also the best. As we harvest fresh each week, our mushrooms and microgreens last up to 14 days in the fridge.

At Microvora we also offer grow kits of all our varieties so people can grow their own mushrooms at home, along with providing instruction on utilizing their spent block in their garden to rebuild their soil (or grow more mushrooms). We have led several workshops and tours, teaching people and their children the magic of growing your own food, and look forward to offering this into the summer.

We've been to many farmer's markets and have always done well with customers, other vendors, and management. We will always be in attendance and on time, with fresh produce each week. We will also be available to help where needed, doing our best to create this awesome farmer's market experience for everyone!

Production Practices

Non Gmo Use Only Organic Materials

We always have and are growing everything organically, but have not gotten our certification yet. We have our meeting with the certifier scheduled and will be acquiring it by May.

We grow our microgreens in very high quality organic soil, that is re-set with fresh soil each batch. Our mushrooms are grown on Oak Fuel Pellets and Soybean Hulls. We do not spray or use any pesticides or chemicals, and adhere to everything learned within obtaining our Colorado Produce Safety certification.

In 2015 I started a company called HerbaHammock which built low-cost, low-footprint and high-output hydroponic growing centers. The kits could grow up to 30 heads of baby lettuce in a 2ft by 2ft area in 1 month (along with any other vegetable/herb, I grew a soil-less watermelon radish in a net pot!), with the ability to stack them 4 levels high in a typical home. My vision was to empower people to grow their own produce for their consumption, and then some so they could sell it to us (or their neighbors) and it would be redistributed out to local restaurants and grocery stores.

I needed more capital to get the units mass manufactured, so I pivoted to growing microgreens in my Herbahammocks to get some income flowing. One year later, I had about 10 weekly restaurant clients, so I decided to move the microgreen farm out of my parents garage and into a 2000sq ft warehouse. After 1 year in the warehouse, I was able to build out and expand into growing mushrooms. We were there for 2 more years until we expanded into our current facility, which is 6000sq ft. We now have an amazing team. Jade is a healthcare professional and seasoned farmer's marketeer, and Adelia is a certified master gardener who heads our production and deliveries, Both of them are great with people, and I have full confidence that this summer we'll be in good hands getting these mushrooms out to the people!

It has been an awesome journey, I have loved connecting with all the chefs, restaurants and people in our community. Food really does bring us all together, and it makes me happy that I can contribute to our community by growing something that is really good for us.

I look forward to continuing create a closed-loop food system within our community, one that I'm sure will empower us all!
