Our tasty cookies have deep Belgian roots! With Belgian ancestry on both sides of my family tree, I grew up surrounded by rich traditions, but richest of all was our family's "lukken", or Belgian waffle cookie, recipe. My great-great-grandmother, Flavie Dewaele, emigrated from Belgium with the recipe, making her cookies one-by-one with an iron heated over a wood stove. We still use Flavie's original recipe today and I have fond memories of gathering in my grandparent's home each November to produce thousands of Belgian cookies to gift to our family and friends for the holidays.
We went from tradition to business during the holiday season of 2021-2022, bringing Belgian lukken cookies to markets along Colorado's Front Range. Rather than pressing cookies over an oven, we're currently making our cookies in small batches and griddling them on an Italian Pizzelle press, but a more traditional Belgian press is on the way! Our original recipe produces a thin, crunchy, buttery cookie with just a hint of whiskey that is great with coffee, hot cocoa, ice cream, and more! We're currently working to develop other flavor additions (chocolate, whiskey double-shot, orange blossom, etc.) to our line-up so we can have a changing menu throughout the upcoming market months.
It's been a treat to see how many people enjoy these special cookies at markets so far. "Lukken" means "to succeed" in Dutch, so from my family to yours, we wish you luck and love with every box!

Owner and baker at Hey, Good Lukken!, I've been exploring this new career path that lets me blend my love for my family's traditional Belgian cookies with my background in event coordination and public outreach. I have degrees in archaeology and museum studies, so bringing lukken cookies to the greater Colorado Springs community means getting to excitedly share a delicious piece of history with everyone who tries my cookies. When I'm not crafting cookies, I enjoy hiking, quilting, and hanging out with my husband and two dogs in Northern Colorado Springs.
