Not Bread is a gluten-free seed loaf crafted from local and organic oats, seeds, honey, and sea salt. We don’t use flour, eggs, nor butter. And, our loaves are totally dairy free. Handcrafted in small batches, Not Bread offers wholesome nourishment that is balanced with fiber, protein, and good fats (from seeds, of course!). Even better, it's as delicious as it is nutritious -- we'd go so far as to say, it's the best "not bread" you'll ever taste! We craft our seed loafs in small, handmade batches with love.

Marie Sonalet, Founder
Our Founder, Marie Sonalet, was born and raised in France, where she delighted in discovering new, innovative, and delicious offerings at her local bakery. In her travels across the world, Marie learned how to combine wholesome, simple, and nourishing ingredients into a unique bread that’s…well, not actually bread!
In 2020, to the delight of her neighbors and friends, Marie began offering ‘Not Bread’ from her kitchen in Bend, Oregon.
According to Marie, “In paying close attention to the quality of our organic ingredients, and to the special way we blend and bake our seed loafs, we’ve created food that delights the taste buds and nourishes the body. We make our breads so that every bite is the most delicious bite.”
The combination of seeds, oats, honey, and sea salt give ‘Not Bread’ a hearty richness, that is unparalleled in flavor and nutrition. ‘Not Bread’ can be found at farmers markets and select stores throughout Oregon.
