About

The New Plate crafts, bakes, and sells a wide variety of unique gluten-free sourdough breads. Our starter is long-fermented to not only capture that tangy "sour" flavor of sourdough bread, but to also to promote gut health overall. The wonderful texture of our breads is presented in sliced and uncut loaves, in dinner rolls, in pizza crusts, in cinnamon raisin and other sweet breads, and more. We also offer straight gluten-free desserts such as chocolate chip cookies and pecan pies. In the world of ferments, we also make and sell varieties of Sauerkraut, Kimchi, and other fermented veggies. The New Plate tent can be found exclusively at the Waco Downtown Farmers Market in Waco, Texas every market Saturday of the year.

Fina Longoria
Fina has a B.S. in General and Business Studies from Dallas Baptist University, She spent four years as an Elementary School teacher for the Dallas Independent School District, as well as eight years as an Education Consultant to businesses for the Dallas County Community College District. A champion of regenerative agriculture, she also ran her own farm for 10 years. Always growing to organic standards, she sold her veggies to chefs, restaurants, as well as in farmers markets throughout the Dallas area. Additionally, she is a Certified Food Coach in the Gut and Psychology Syndrome (GAPS ) protocol championed by Dr. Natasha Campbell-McBride. She also has a Certificate in Herbal Studies from Clayton College.
