Night Sky Coffee Roasters is a small coffee company proudly located in Winder, GA. Owned and operated by Charlie and Amelia Finch, Night Sky Coffee began as a journey for the perfect cup of coffee. They started out roasting coffee on a popcorn popper trying to mimic roasts they enjoyed from the local bakery. They soon discovered that each batch of beans they roasted, depending on the origin/region and processing, had different flavor characteristics. After upgrading to 1 pound batches using a drum roaster, they found that they could more easily manipulate the roast profile to better enhance the flavor characteristics of each bean. Noting that some beans needed a lighter roast to help bring forward the citrus-fruity like flavors, while other beans benefited from a medium-dark roast to help enhance the sweet/chocolate notes.
The goal of Night Sky Coffee is to help cultivate a community by offering a welcoming local space for people to gather, to learn about coffee and hopefully each other. We believe that we have a responsibility to the community we serve, to listen, be part of and give back.
Night Sky Coffee is dedicated to sourcing coffee from responsible importers with the goal of fostering social responsibility in their business practices. By doing this they can maximize the contribution to the community while treating everyone in the supply chain from customers, suppliers, importers and farmers as extended family.
