We make various flavors of koji (the key component for making miso, soy sauce, sake & lots of other Japanese umami-rich products). Koji is traditionally made from barley, rice or soy beans, but since it can be made with any variety of grain or legume, we do! We want to sell this product directly, but we also make some offbeat misos from them too. To date we have: Sunflower Seed / Brown Rice Miso, Adzuki / Barley Miso, Sunflower Seed/ Brown Rice Miso, Chickpea / Barley Miso, Peanut / Brown Rice Miso, Chestnut / Brown Rice Miso & Lentil / Barley Miso. The kojis we've made are nixtamalized corn, adzuki bean, brown rice, barley, red rice, sunflower seed, white rice, & more.
