Don Felipe Products, LLC

Don Felipe Products is a family-owned and operated Portland-based business that specializes in artisan Mexican chorizo. Named after my grandfather, ‘Don Felipe’, Don Felipe Products began in the summer of 2012.

When I moved to Oregon I found that Chorizo was not very common and the only chorizo I came across lacked quality; it was either too greasy, it was overly spiced, most of the commercial brands contained, fillers, unhealthy preservatives, artificial coloring, and MSG.

Having a passion for exquisite Mexican dishes I decided to make my own chorizo for my family and my guests to enjoy during our gatherings. I decided to re-invent chorizo. I minimized the fat content, used only quality spices, added natural preservative (apple cider vinegar) for longer shelf life and good cuts of pork and beef for every batch.

Production began at a small level in a tiny commercial kitchen in Forest Grove, Oregon with the help of a non-profit organization known as Adelante Mujeres. Forest Grove Farmers market became our very first outlet. Long nights in that small kitchen allowed us to bring our first two recipes to the market. Our Chorizo Verde 'Green Chorizo' quickly became a hit for its unique blend of spices and tangy bite. The recipe calls for both pork shoulder and Angus beef. Its rich green color comes from the serrano peppers, pumpkin seeds and spinach (used as natural coloring). Our Chorizo Rojo, 'Red Chorizo' is the more traditional, it's made with pork shoulder, crushed red peppers, paprika, cinnamon, and a savory blend of spices.

To date - we have developed a third Chorizo recipe – Chicken Chipotle, made with ground chicken thighs seasoned with smokey chipotle peppers and spices making it a great alternative for those who love chorizo but are sensitive to beef or pork.

We are proud to offer a lean and clean alternative to chorizo to the Pacific Northwest without compromising the flavor. We believe in quality natural foods and are excited to bring wholesome fresh chorizo products made from locally sourced meats and spices, free of added wheat, sugar, soy, MSF, artificial coloring and nitrates to our patron's tables.
