Eight years ago we started making cheese in a shipping container... we outgrew our small cheese pod quickly! We are now at home in our state-of-the-art facility in Groton, just minutes from downtown Mystic Village. Our goal is to have the cleanest and most exceptional cheeses made with care, technique, and the science & art of milk metamorphosis.

We use only single-herd milk from our friends’ family farm, Sunny Side, in Voluntown, CT.
