The "Da Sugar Mill" is a Pop- up restaurant in Honolulu Hawaii, that offers Artisan Hawaiian Plantation Cuisine! We stay true to our plantation roots by sourcing quality ingredients from local distributors, producers, farmers, and fishermen. We pride ourselves on our collection of "Old School" local recipes presented in new simple ways. Our pop-up is located at 2300 N. King Street Unit 101. (Next to Mitsuken) We believe in a sustainable Hawaii and strive to make every decision based on that core principle.
Lawrence Ozoa
I was born on Oahu and raised on the North Shore. I spent my formative years in Haleiwa, Waialua, and Wahiawa during the '70s and '80s. Our island’s plantations and mills were very active then. The culture and lifestyle of plantation life influenced the way I picture the world today.
I grew up in the kitchen cooking with my grandparents and parents. For me, the sharing of food was the center of familial conviviality, it was our core of connection in good and bad times. From an early age, I viewed the kitchen as the most important room in any house.
After returning home from San Francisco in 2010, I found my way back to the kitchen - not just at home but in my professional life. Over the years, I have worked for many chefs and have learned many things, yet the most important lesson for me has been the visceral need to return to my roots.
I have just finished an amazing tenure working as the Executive Chef for Nico’s Kailua where I was allowed and supported to find my point of view, to grow my style of cooking, and to return to myself.
I am excited for the opportunity to continue to share with you my passion for cooking and plantation foundations, as well as to foster a dialog of a sustainable Hawaii through my exploration of this cuisine.
