Fatto a Mano has been a vision of mine for years. In 2018 I found myself a mobile wood fire oven on wheels and started slinging pies. We focus on naturally leavened sourdough pizza with farm to table ingredients and hand pulled mozzarella and other local cheeses. I would consider myself Neo-neopolation. Pizzas cook in about 90 seconds flat.
