Maia - Mini Maia

A washed rind, semi-soft cow's milk cheese reminiscent of a robiola, taleggio with a bit of teleme. Washed in brine for weeks weeks as it ages. Fudgy texture with hints of clotted cream, papaya, vanilla, sweet corn, melons, and ham.
