Pacific Northwest Fernet

Our pet project from the first day we started distilling. Fernet represents the epitome of Italian style digestifs - and everything we love about herbal, Old World spirits. Intensely layered, unflinchingly expressive herbs and spices, and well curated bitterness characterize this upper echelon of drinking spirits. Our Fernet, the first created in the Pacific Northwest, was made in the Italian tradition of producing a spirit that speaks to the terrior (local flora) of where the spirit was crafted. To that extent, our PNW Fernet lends on wild foraged Doug Fir tips, Willamette Valley hops, birch bark, and black aloe to create a spirit that recreates the sensory memory of standing in the middle of the woods, after its rained, while everything is damp & wonderfully aromatic.
