We are a local corporation for over 40 years. Our parent company is Mayes Foods Services, Inc. We are doing business as The Freshly Forked, a meal prep company. The Freshly Forked is clean, preservative free and made in our Jacksonville Beach commercial kitchen on Penman Road. In addition to our meal prep, we offer an array of beautifully made salads with our signature dressings, salsas and sauces. All preservative free and gluten free.

We've been in business together for more than 30 years. We oversee every aspect of our corporate food service and the meal prep shop.
Cathy is a 4th generation Jacksonville Beach native, whose family has been in the restaurant business since the 1930's. My grandparents owned a seafood market in the 30's and then Gufford's Chowder House in the 40's. Later my Uncle owned Bill's Broiler in the 60's. My mother catered, as a way to bring extra income to our family. I had amazing people share their food knowledge with me as I was growing up.
My Husband, Mike Mayes, began his love of food when he started Hero Concessions in 1978. He was the food service company for 5 minor league baseball teams around the U.S.. In the 80's Hero Concessions expanded to the PGA tour, where he provided the on-course and club food at The Players Championship, The Honda Classic, The Bayhill Classic and 5 other tournaments around the State of Florida. That led to the creation of the festivals at Jacksoville Beach, where he co-produced The Crawfish Festival, Springing The Blues and The Opening of The Beaches. In the 90's we made a name change to Mayes Food Services, Inc in order to expand from just concessions to concessions and catering. We have been one of 2 contracted food service companies at the University of North Florida for more than 28 years.
Last year, because so many of our venues were shut down due to COVID, we brought our 5 year old meal prep company (that had been under the umbrella of Mayes Foods) to Jacksonville Beach as The Freshly Forked.
