Nonna's Table Artisanale Pastas are prepared with 100% Drum Semolina flour. The pasta is then air dried for a minimum of 24 hours. This is done to preserve the highest protein content and wheat flavor creating a perfect "al dente" firmness. All our pastas are processed using a bronze cut die which creates a unique texture to "capture" the sauce. A staple in the Mediterranean diet of southern Italians.
