About

New Cascadia Traditional® is a dedicated gluten-free bakery, specializing in hand crafted artisan breads, pastries, cakes, and cookies, as well as pizzas and salads. Our retail location is in SE Portland at 1700 SE 6th Avenue Portland, OR 97214-3525. We can also be found at the Portland Farmers Market and local grocery stores, cafés, and coffee shops around the Portland metro area.

Our goal is to bridge the gap between naturally leavened, whole-grain, traditional breads and gluten-free bread baking. We strive to make a baguette that has a true crust and crumb, a bagel that is boiled and can be held to the standards of good taste, no matter that it is made without gluten. The natural starter we use for our bread consists of two ingredients: flour and water. Likewise, our list of ingredients for any given bread is simple and concise.

We use high quality, locally sourced, seasonal ingredients to make the best possible pastries. If your grandmother were to visit our kitchen, she could easily step in and recognize our ingredients and methods: fresh summer berries filling our pastry crust, autumnal stone fruits paired with spices and rolled into flaky envelopes of dough, cakes baked with care and an eye for perfection. Our hand is in everything we make.
